Boxes hold 2, 4, or 12 pieces, and can be
stacked in any combination.
Chocolates
All of our chocolates are made with fine dark chocolate (cocoa liquor, sugar, cocoa butter, soy lecithin, vanilla; no soy in the Dagoba) and cashew milk (almond milk for the Aztec flavor; coconut milk for the Coconut flavor) and flavored with liqueur or infused with spices. Nothing else. No artificial sugars or flavorings, no extraneous fats or emulsifiers.
Order by selecting an assortment by chocolate as listed below (for example, the Dagoba assortment), or mix and match by indicating individual flavor choices in the "comments" box when you place your order.

Our truffle selections are made with the chocolate indicated. Each box contains an equal assortment of the four flavors listed for each collection. If you'd like a different assortment, let us know. If you'd like a particular flavor made with a different chocolate, we can do that, but it will be considered a special order. All of our truffles are dairy-free and made with nut milk; if you need nut-free truffles, we can do that, too. We keep dedicated nut-free equipment to accommodate your needs. We require minimum quantities or an additional charge for special orders; contact us and we can work out the details. We aim to please.
Chocolate Information
Chocolate has complex flavor profiles, and much depends on where the cacao was grown and how it was processed. In addition to differences in flavor, labor issues and farming practices are important to us. Some cacao plantations use child and slave labor. Fair trade certification ensures that farmers receive a fair price for their products and that workers are paid a fair wage.
Of the chocolate we use, only the Dagoba Conacado is certified fair trade; it is also certified organic. Scharffen Berger and Valrhona are known to monitor their cacao producers for farming and labor practices, but none of their chocolates have as yet been certified as fair trade or organic. To be certified fair trade and/or organic, manufacturers pay a fee to a certifying agency or organization. We use fair trade coffee and matcha when we use coffee and green tea; see specific products for more information.
When we use a percentage when referring to chocolate, that number is the percentage of cacao beans and cocoa butter, by weight, of the total composition of the chocolate. The higher the percentage of cacao, the less room there is for sugar (1% is typically lecithin and vanilla), so the higher the number, the less sweet the chocolate. All of our chocolates are dark chocolates, in the semisweet and bittersweet range.

Dagoba Conacado:
Certified organic, certified fair trade
We use 73% chocodrops in our chocolate chunk cookies, and to make truffles and other confections. This is the highest percentage chocolate we use, yet it is surprisingly sweet and very chocolatey. The beans come from the Conacado Co-operative in the Dominican Republic. The chocolate is manufactured in the USA.

Valrhona:
Many people say that Valrhona makes the best chocolate in the world. I used to think this was pure snobbery, until I ate some last year. And then I ate some more. And then I ate the rest that I had bought to use to make some holiday gifts. The 66% Caraïbe semisweet is very smooth with a very full taste; made with beans from the Caribbean. Bittersweet 70% Guanaja is intensely chocolately; made with beans from South America. Both are manufactured in France.

Scharffen Berger:
We use Scharffen Berger's 62% semisweet and 70% bittersweet chocolates; both are full-flavored and slightly fruity. Scharffen Berger blends a variety of beans carefully chosen from plantations around the world, and is a small-batch artisanal producer located in the USA.
